Soap Hub recently caught up with General Hospital’s Kathleen Gati (Liesl Obrecht). A little birdie told us that she loved to cook. Oh, who are we kidding! She recently held a fan event called Kathleen in the Kitchen with Coastal Entertainment and we reached out to see if she had a recipe she could share with us for the holidays. Here’s the recipe that she sent us with a note to the fans!
Kathleen Gati’s Savory Corn Muffins
On any given day, Dr. Liesl Obrecht on GH can be naughty or nice…and the fans love it. While the character is German, the actress who portrays her, Kathleen Gati, hails from Montreal, Quebec, raised by parents with Hungarian roots. It is no secret that when she is not dishing up drama in Port Charles, Gati is pulling flavors from her heritage and making mouth-watering comfort food in the kitchen!
The Story Behind The Corn Muffins
Kathleen Gati: When I had my Nusi Nasi bakery in Hungary, I did thorough market research on every item that was offered. And almost each of the 30 items on the bakery’s list was very much loved…except for two items. One was peanut butter cookies, something the Hungarians’ palate was not accustomed to, and the other was corn muffins.
I was so excited to bring North American flavors to Hungary, and almost everything was gobbled up with enthusiasm, but for some reason, these two items were a no-go. However, back in the USA, my corn muffins have been enjoyed and appreciated! And hopefully, you will like them as well. They are a touch sweet but have warm Italian spices and corn kernels for a nice bite. I also like to add some shredded cheddar cheese into these muffins, but that’s totally up to you!
Kathleen Gati’s Recipe
Ingredients
2 eggs
2/3 cup vegetable oil
1 cup milk (coconut milk works too!)
1/2 cup sugar (or sugar substitute)
1 cup cornmeal, medium grind or cornflour
1 cup flour
2 tsp baking powder
1 Tbsp chopped fresh rosemary
1 Tbsp dried oregano
1 tsp fresh or dried basil
1 tsp thyme
1/2 tsp salt
1 cup drained corn kernels (canned or frozen-optional)
1/2 cup shredded cheddar (or other cheese of choice if desired like parmesan or Swiss. Recommended by Kathleen Gati, but strictly optional)
Directions
• Whisk eggs, add oil, milk, and sugar.
• Mix in flour, cornflour, and baking powder.
• Add in the spices and salt.
• Stir in corn and grated cheese.
• Spray muffin pan generously inside and across the top of the pan in case of overflow so the batter won’t stick. Fill each muffin to the top of the pan.
• Bake at 400 F for 15-20 minutes. Makes a dozen medium-sized muffins.
• For mini-muffins, bake at 400 F for 10-15 minutes till look and feel done. Should be bouncy, but does not need to look golden to be done. • Of course all ovens are different, so keep an eyeball on your muffins.
