The year 2020 has been quite a trip around the sun and so many of us have spent more time at home than we ever expected. Eileen Davidson has spent her recent time at home in the kitchen, cooking up a variety of amazing dishes, several of them using leftover turkey in new and original ways.
The Young and the Restless actress has been posting some of her recipes made with things around the house on Instagram and Soap Hub now wants to be invited for dinner (or at least try creating these things on our own).
Davidson got original with some turkey, creating a light and healthy-looking meal for her husband and teenage son. Let her tell you about it as follows:
“Happy Monday! I thought I’d start posting what I’m up to in the kitchen. Been cooking since I was a kid. My mom was the kind of cook that made her noodles from scratch when she made chicken noodle soup. I learned everything from her because I was her sous chef. I cook all the time but I’m so busy and distracted I don’t take photos and really never post but I’m gonna try!
“I made this today with leftover dressing and turkey and mashed potatoes. I cut up the turkey and the dressing and I added it to the mashed potatoes with one egg and some cheddar cheese and some Parmesan cheese some salt fried it up in a little oil.
“I think mozzarella cheese would be better but I didn’t have any on hand. I served it with sour cream to my husband I was going to add applesauce but what I found in the fridge had expired months ago. 🤷♀️ My 17-year-old loved it with ketchup and it was a hit across the board.”
But that’s not the only thing Davidson has cooked up over the last few days. In a post showing us her turkey noodle soup, she gave us a list of her culinary creations.
“In the last five days I have made breaded chicken cutlets with pasta puttanesca, ribeye steaks with potatoes au gratin and roasted brussels sprouts, four-layer lasagna with fresh mozzarella and turkey sausage and ground turkey pink tomato sauce, classic roast turkey with sourdough bread stuffing, mashed potatoes gravy and string beans.
“Let’s not forget the chocolate peanut butter brownies with chocolate buttercream frosting! Culminating in today’s homemade leftover turkey carcass noodle soup! Counting my blessings this holiday season not to mention counting the pounds I have gained.”
