The Bold and the Beautiful star Jacqueline MacInnes Wood has been keeping us all entertained during quarantine with her adorable videos featuring makeup, dancing, and even her son Rise.

Now, she’s ready to teach you to stay healthy and make an amazing dish while keeping it low carb and even vegan. It’s called Vegan Bolognese and adds a new twist to an old Italian favorite.

“I’m cooking up one of my favorite meals where I’m trying to be healthy but I’m really craving that bolognese,” she says in yet another clever Instagram video. “I’m cooking spaghetti squash and vegan bolognese.

It’s a veritable vegetable extravaganza with broccoli, celery, mushrooms, and onions. But bolognese means meat, so how does one do that while trying to stay vegan? According to Wood, it’s the overabundance of food-processed fresh mushrooms that lend that meaty flavor.

The Bold and the Beautiful star even gives the sauce a twist by adding crushed walnuts to her “meat” base for an added crunch. The easiest part of the recipe is just pouring a jar of marinara sauce over her vegetable and nut paste.

Wood says she cooks up an overabundance of it thinking it will last a week, but she ends up eating it in two days — that’s how much she loves it.
